On 8/17/19 we had a cooking class fundraiser. It was fun and a huge success! Maricela taught us how to make some delicious, Mexican dishes: cactus salad, mango salad, cerviche, enchiladas de Michoacan, and apple fritters. We checked in on our six projects during our last visit in May/June, meeting with the teachers and visiting the classrooms. We continue to be amazed at the quality of the teaching and the level of creativity in all of the educational activities. We returned from Guatemala and jumped right into fundraising for our projects by organizing a tamale sale!! Project Quetzal had its first Tamale Sale on 2/18/19. Maricela and her daughters worked very hard and made 3 kinds of tamales. They were delicious, and everyone wants more! We sold 47 dozen tamales!!!
